Tiramisu! Photo recipe…

I may or may not have shared my sorta healthy Tiramisu recipe with you all…too lazy to look! After two nights in a row of dinners at restaurants with Tiramisu on the dessert menu, I was inspired to make my own. It is easy!

1. Lay ladyfinger cookies on a casserole or whatever.

2. Spoon coffee (I used instant decaf) on the cookies to soften.

3. Blend 2 small cartons of low fat (or fat free if you can find it) ricotta cheese, 1 egg, and 1 cup sugar (I use  splenda to cut the calories), and a splash of vanilla. You can also add a splash of rum, Kahlua, Bailey’s, extra coffee if you like a strong coffee taste, or whatever in here.

4. While blending, crush up some extra cookies. 4-5 should do.

5. The cheese mixture is ready when it is smooth like this…maybe 3 minutes in the food processor.

6. Spoon and spread about 1/2 the cheese on the cookies.

7. Spread the broken cookies on top, and drip coffee on them.

8. Spoon and spread the rest of the cheese, and sprinkle with some cocoa (cinnamon works well too)

Yummy right away, or if you like a more solid Tiramisu, let it sit in the fridge. Or do both. A bit now…a bit later.
