It was my brilliant husband’s idea, so I tried it. After exploring several recipes and my pantry, I ended up creating this:
– 1 & 3/4 cup Wild Roots Pancake Mix
-1/4 cup melted light butter
-1/2 cup 1% milk
-1/2 cup Splenda (I know, I know…use sugar, or agave, stevia, or honey…or whatever sweetener is not considered the devil today)
-1 tsp. vanilla extract
-3 tbsp. white chocolate chips
Nutrition info (per muffin, made 12): 131 calories, 3.8g fat, 21g carb, 2 protein, 5.8g sugar.
I’d recommend eating them over a plate. Yummy…but very crumbly!
