-cooked veggies (I used zucchini and garlic. Anything works though. I love asparagus)
-2 large eggs and 4 large egg whites
-1 cup skim milk
-1cup shredded cheese (I used light tex-mex)
1. Sautée veggies, unless you are using leftover cooked veggies. Then use as is.
2. Mix eggs, whites, milk and half the cheese.
3. Put veggies at the bottom of casserole dish. Pour egg mixture on top. Then sprinkle remaining cheese on top of that.
4. Cook at 350 for about 50 minutes.
