I was looking for something new to do with yams today, and decided soup would be awesome. As usual, I scoured recipes, dug through the fridge and pantry, and then created my own!
2 large sweet potatoes
1 tbsp canola oil
1 small yellow onion, chopped
1 tbsp minced garlic
3 cups tomato sauce (juice or canned tomatoes would work too)
1 tspn minced ginger
1 tspn cinnamon
2 cups vegetable broth
1/2 cup smooth light peanut butter
1. Peel and cut sweet potatoes into bite sized peiced. Microwave on High until just cooked through, 7 to 10 minutes. Set aside to cool.
2. Sautée onion and garlic. Throw tomato sauce and ginger in the pot, bring to a boil then simmer.
3. Toss half the sweet potatoes in the pot. Blend the other half with the veggie broth and peanut butter unto smooth.
4. Stir the stuff from the blender into the pot. Enjoy chunky, or blend all together (I did).
