Yesterday, I made up my own soup, with butternut squash and yam. It was delish!
-2 teaspoons butter
-1/2 white onion
-1 teaspoon minced garlic
-1 diced squash
-diced sweet potato
-4 cups vegetable broth
-1 cup light coconut milk
-1 teaspoon cinnamon and
-1 teaspoon curry powder curry powder to taste
-sautée onions and garlic in butter until lightly browned. Add squash and potato to the pot, toss until browned.
-add broth, bring to boil, the lower to simmer until soft (about 20 minutes)
-stir in coconut milk, cinnamon and curry.
-blend until smooth
