Last weekend I made a red lentil curry that was so tasty it had me craving more. I ate it too fast to forgot to take pics but here is the recipe.

So yesterday, I tried this sweet potato mushroom curry. I stayed mostly true to the recipe (because I had all the ingredients on hand) but did dump in the full can of light coconut milk, and added a dash of cinnamon, and it was so good! It made 4 servings for me (maybe because I served with rice, and had an extra 1/2 cup or so coconut milk). I put the recipe into my calculator, it came up at 139 calories and 6g of fat for 1/4 of the recipe (without rice) .
