One of my very favorite things to bake and eat before I went gluten-free was banana bread. So quick and easy to bake, and so tasty! I can also kid myself into believing it is healthy, because bananas are very very nutritious.
A few weeks ago my friend recommended this gluten-free banana bread recipe. It took me a while to get around to making it, but I finally tried it today.
I’m so impressed!
I just had a slice, it was delicious! Not soggy or mushy at all. I followed the recipe pretty well, I did use a third of a cup of maple syrup since the bananas were not very ripe…and used (gaylea light spreadable) butter instead of coconut oil. I baked it for just under an hour, and let it cool for about 15 minutes.
Calculated at 9 slices, 168 calories, 6g fat, per slice.
