Salmon cakes

Made these for dinner recently. Ate them all before Adam got home. Oops.

Super yummy and easy recipe from The Gluten-free homemaker:
1 can salmon, drained and bones removed
1 Tablespoon lemon juice
1 large egg
2 Tablespoons gluten-free bread crumbs or gf instant potatoes
pepper to taste
coconut or other cooking oil
Combine all ingredients in a bowl.
Form into patties (I made five).
Fry in hot oil until brown on both sides and hot through.

P.s. I also tried them with tuna. I prefer the salmon flavour but tuna worked too. I suspect they be good with some crab mixed in as well…but crab is not kosher and fake crab is not gluten-free.
