Kale addiction

My name is Jill and I’m addicted to kale. I used it 4 times this weekend.

1. Sauteed kale. I stir fried it with some olive oil, salt, pepper, garlic and ate it just like that. 20140520-123709.jpg
2. Pasta salad. Tossed some pasta with sauteed veggies, roasted tomatoes and sautéed kale (as above) and ate chilled with an olive oil, garlic, lemon juice and Parmesan dressing:
3. Hot pasta. I heated leftovers of the pasta salad in my cast iron skillet and tossed in some more parmesan and some sundried tomatoes for a hot pasta lunch. No pic!

4. Raw salad. Hand shredded kale tossed in a dressing of garlic, olive oil, lemon juice, sea salt and cider vinegar, with a dash of Parmesan.

Good thing kale is so stinking healthy!

All these kale-centric treats are gluten free and vegetarian, could easily be vegan if to leave out the parm (and maybe add some salt.
