I’ve been craving Caesar salad lately, so I made a vegan one! It was delish!
Caesar dressing (recipe from a friend)
3/4 cup raw cashews (soaked and drained)
3 cloves of minced garlic
1 Tbsp Apple cider vinegar (Bragg’s is amazing)
1 1/2 Tbsp dijon mustard
1/4 cup nutritional yeast
1 1/2 tbsp soy sauce, tamari or liquid aminos
1/2 cup of water or more to blend
Blend in a blender. Chill if possible and serve. If you don’t have a high speed blender this will be gritty but it actually works because caesar dressing is normally gritty because of the parmesan.
I also made some gluten-free croutons. I cut a piece of bread into pieces, tossed it in a little olive oil and salt, and stirfried it on a skillet until the pieces got browned and crunchy. Yum!
